I saw that you said to include any other suggestions here in the comment box, so I have a really great one that I and a lot of other cookie decorators love and use. As this product that has really enhanced the flavor choices I can offer and has been such a hit with my cookie decorating friends as well, I would recommend the all-natural flavoring and extracts from Spices Etc. Their Clear Vanilla adds a great taste to my icing, won’t add a color tint and I love that it is all-natural, much better than the other options out there. Beyond that, they have a vast array of other great flavors, from citrus such as Lemon, Orange, Raspberry, Pomegranate, etc, to fun seasonal flavors such as Pumpkin Pie Spice, Maple, Brown Sugar, etc. and flavors in between. I sometimes do the same flavor in both the dough and icing or do one flavor in the dough and another in the icing. It is fun to come up with flavor combinations. For example, the Chocolate gives my Chocolate Cookie great depth which is then so good paired with a Raspberry icing. I get great reviews on the flavor of my cookies. I found out about them when Cook’s Illustrated named their Coconut #1. I tried it and it was fantastic and I have used many of them since. This has to be one of my favorite products out there. Followed the link here from the Wilton forums. My go-to sugar cookie and glaze recipes are from Better Homes and Gardens’ Holiday Cookies publication from 2008 (if I recall the date correctly offhand). One issue I run into is that our area is very humid, and my cookies can get very soft while I’m going through several iterations of base glaze and adding various colors of design (which the humidity can make “bleed”). Any ideas for handling this?
I fight with the humidity too… it is off the charts here in TX during the summer! Although I don’t use glaze, sometimes there are bleeding issues with royal icing too. I would suggest making sure that the icing is thoroughly dry before adding another layer. Check out resource #69 on this post (How To Prevent Your Icing From Bleeding by Sweetopia) for more tips on how to avoid this issue.
Oh, the icing is completely dry before adding the next layer. But subsequent humidity re-dampens the icing and dark colors bleed into the light ones. And the cookies become soft and friable.
Hhmmm… that’s a tough one. Do you keep the A/C running? I’ve read suggestions to put the iced cookies in the oven with just the oven light on overnight. I tried it once and actually found it a little drying but it may be perfect for your issue. I would start with that and using a dehumidifier to get some of the moisture out of the air in your decorating area.
Have you tried working with royal icing instead of glaze? What are the icing and cookie recipes that you use?
We don’t have A/C here except in the bedroom (our apartment is in a century-plus-old house; A/C blows the circuit. Sometimes, even the microwave blows the circuit.) The oven is the only place I can store my mixing bowls (they occupy a stove burner when I need the oven, and even then it’s often a juggling act).
I use the Woman’s Day Holiday Cookies recipe for ‘Basic Sugar Cookie”: 1 c butter, 1/2 c granulated sugar, 1/2 c powdered sugar, 1 egg, 1 t vanilla (or other flavor extract), 1 t baking powder (I prefer to use sodium-free when I can get it), 1 t salt (omitted), 2.5 c all-purpose flour (I use whole white wheat flour). The cookie glaze is from the same magazine, it’s powdered sugar, light corn syrup (sometimes replaced with honey, agave syrup, or maple syrup), milk (usually skim milk, occasionally replaced with lemon juice or other flavored fluid), and vanilla (or other flavor extract — omitted if I’ve used other flavoring).
Unfortunately, the A/C situation could be contributing. Things I would try (not necessarily all at once): 1) use a dehumidifier, 2) remove up to 1 tbsp of egg from the cookie recipe (maybe experiment with other recipes too), 3) set cookies on paper towels when cooling to absorb oil, 3) use a fan to help dry the icing, 4) try royal icing instead of glaze, 5) set iced cookies in oven with only the light on (if u have the space to work with)
