Supplies for Making Double-Decker Light Saber Cookies
To make double-decker light saber cookies, you will need:
- Cookies made from your favorite sugar cookie recipe and cut using a square cookie cutter
- Icing made from your favorite royal icing recipe in navy, red, electric blue, white, gray, and black (I used 10-count consistency icing for all the steps in this tutorial. If you need help with icing color or consistency, check out the How To Make Royal Icing section of 101 Essential Cookie Decorating Resources.)
- Red sparkling sugar
- Electric blue sparkling sugar
- Toothpicks
- Icing bags or bottles, couplers, and tips (I used a #2 tip for all the steps in this tutorial.)
How To Make Double-Decker Light Saber Cookies
After you bake all of your square cookies, use your cookie dough scraps to make light saber shaped cookies. Hand cut the dough into small light saber shapes and bake them on a parchment lined cookie sheet. Watch the cookies closely, they will bake really fast due to their small size. Cut half of your light saber cookies into two pieces as shown.
Outline and immediately flood your square cookies with navy icing. While the icing is still wet, use your white icing to scatter dots throughout the entire surface of the cookie. Drag a toothpick through each dot, starting at the center and pulling outward to create random star shapes.
Continuing with the icing still wet, place your light saber cookies onto your square cookies in a criss-cross pattern. Allow the icing to dry completely (preferably overnight) before moving on to the next step.
Cover the blade of one light saber in electric blue icing. While the icing is wet, cover the area in electric blue sparkling sugar. Let the icing dry for a few minutes and then gently shake off any excess sugar.
Helpful Hint: To easily save any unused sparkling sugar, do your decorating over a coffee filter. After you shake off the excess sparkling sugar, you can easily pour it back into your sugar container.
Repeat the same process with your red icing on the opposite light saber cookie. Fill in the light saber handles with your gray icing, adding black dots while it is still wet.
Finish off your Star Wars cookies by outlining around the edge with red or electric blue icing.
