Well, the weather outside is certainly frightful. And while my curious pup doesn’t mind a bit of frost on her nose, I prefer to stay inside where it’s warm. If you need me, I’ll be in the kitchen until all the ice melts!

Snickerdoodle Cupcakes

Ingredients
1-1/2 cups all-purpose flour
1-1/2 cups cake flour
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon ground cinnamon
1 cup unsalted butter, room temperature
1-3/4 cups granulated sugar
4 large eggs, room temperature
2 teaspoons vanilla extract
1-1/4 cups whole milk
1 teaspoon half and half

Directions
Preheat oven to 350 degrees.
Line a cupcake pan with paper liners and set aside.
Use a sifter to combine all-purpose flour, cake flour, baking powder, salt, and cinnamon.
In a separate bowl, cream the butter and sugar until light and fluffy.
One at a time, add each egg and incorporate into the mixture.
Mix in the vanilla.
On a low speed, mix in a third of the flour mixture and half of the milk. Beat until combined. Repeat with another third of the flour mixture and the other half of the milk. Then, add the rest of the flour mixture and beat until combined one last time.
Pour the mixture into cupcake liners, filling 3/4 of the liner.
Bake for 20 to 25 minutes, rotating the pan halfway through the baking time.
Test cupcakes for doneness by inserting a toothpick into the center. Remove the cupcakes from the oven when the toothpick comes out clean.
Let cupcake pan sit on a cooling rack for about 20 minutes. Then, remove the cupcakes from the pan and place them on the rack until completely cooled.

Brown Sugar Buttercream

Ingredients
1 cup unsalted butter, room temperature
1/2 cup vegetable shortening
2/3 cup dark brown sugar, packed
1/4 teaspoon salt
1/4 teaspoon vanilla extract
1 teaspoon cinnamon
6 cups powdered sugar
3/4 cup heaving whipping cream

Directions
Combine butter and shortening into a fluffy mixture using a whisk.
Mix in the brown sugar, salt, vanilla, and cinnamon. Combine well.
Add 1 cup of powdered sugar and mix until combined. Repeat until all sugar is blended into the mixture.
Increase the mixer’s speed to high and slowly mix in the whipping cream until you reach your desired consistency. (Slight adjustments may be needed to the amount of cream added.)
